Chefs Erik & Dale Peacock (Wellington Court & CHILERO)

The chefs will be a part of the Flights of Chardonnay culinary crew on Friday, July 20th.

Erik Peacock grew up around the food business. This early exposure, paired with the beautiful bounty of the Niagara food and wine region, shaped Erik’s future as a chef. After spending time in Australia, Erik returned to Ontario where he attended George Brown College in Toronto for Culinary Arts. Upon his return the wine and food scene in Niagara was emerging. This opportunity delighted Erik. He formed relationships with winemakers and winery owners as well as local food producers. They inspired Erik to create a menu focused on local ingredients infused with international flavours. Before long, Wellington Court Restaurant was one of the region’s dining hot spots. He along with his wife Dale and chefs Cait and Jess are always reaching for perfection. New for 2018, Erik will open the restaurant at Bench Brewery.

Dale has a passion for people and this passion is portrayed in the commitment to warm, friendly, unpretentious service. Whether at Wellington Court, Catering, Chilero or The Coach House you are always welcomed with a smile. Erik and Dale have run this family business since 2006. Dale surrounds herself with caring, equally passionate professionals which is clear when you visit any of the properties this duo own or manage. Wine, family, food, fitness and fun are high on the list of what’s important!
